The Herbs

Lemon balm is a leafy member of the mint family, loved by bees. Its name Melissa comes from the Greek word for honey bee. When the leaves are gently crushed they release a fresh, lemony scent, and they have been dried for infusions in European homes and monastery gardens for generations.

How to Prepare
